Pita Bread

Pita Bread
 
1 tablespoon yeast
1 ¼ cup warm water
1 teaspoon salt
3- 3 ½ cups flour
Dissolve yeast in water for about 5 minutes in the bowl of an electric mixer. Add salt and 1 ½ cups flour and with the dough hook, beat to make a batter. Add additional flour until a rough, shaggy mass is formed. Knead 8 minutes until dough is smooth and elastic. Add more flour if it is too sticky.
Turn dough onto a lightly floured surface and divide into six pieces for large pitas or ten for smaller. I make all sorts of sizes to suit different snacks and meals. Form dough into balls, then flatten with a rolling pin into ¼ inch thick discs. Try and keep an even thickness as this is what helps them ‘puff’.
Let rest on the floured surface 30-40 minutes until slightly puffed.
Preheat oven to 425F.
With a large spatula, flip the rounds of dough upside down on to a baking sheet. Bake 10-15 minutes until light golden. Stick around for the first five minutes of baking when the pitas perform their magic and puff up from flat pancakes to proud, four inch high pitas.
These store for up to two days well wrapped or frozen for three weeks.

Blackberry Cobbler

Yesterday we were given some blackberries so I knew that I would have to make one of Roger's favorite desserts for him, blackberry cobbler.  Instead of using one that I have used before I looked online and of course I went to Pinterest as I usually do if I am searching for something and I found the following recipe for Blackberry Cobbler.  I did not read the entire recipe before I started making it so I was surprised to see that I was suppose to roll out the crust and put the blackberries on top and then roll it all up in a jelly roll style.  I wasn't sure how this recipe would turn out but I am very happy to report that Roger really liked it. 

Blackberry Cobbler

Ingredients

  • 1 cup butter or margarine, divided
  • 1 cup sugar
  • 1 cup water
  • 1 1/2 cups self-rising flour*
  • 1/3 cup milk, room temperature
  • 2 cups fresh or frozen blackberries
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons sugar

Directions

  1. In a 10-in. round or oval baking dish, melt 1/2 cup butter; set aside. In a saucepan, heat sugar and water until sugar melts; set aside. Place flour in a mixing bowl; cut in remaining butter until fine crumbs form. Add milk, stirring with a fork until dough leaves sides of bowl. Turn out onto a floured surface; knead three or four times. Roll out to an 11-in. x 9-in. rectangle 1/4 in. thick. Spread berries over dough; sprinkle with cinnamon. Roll up, jelly-roll style. Cut into 1/4-in. thick slices. Carefully lay slices in baking dish over butter. Pour sugar syrup around slices (syrup will be absorbed). Bake at 350 degrees F for 45 minutes. Sprinkle sugar over top and bake 15 minutes more. Serve warm or cold. (*If self-rising flour is not available, use 1-1/2 cups all-purpose flour plus 1/4 teaspoon salt and 2-1/4 teaspoons baking powder.)

God Story

Over the past few days on a board that I frequent people have been talking about their God story.  One person commented that she looked forward to telling her God story when it happened.  Well, I think everyone has a God story to tell.  A lot of times we can only see God working in our life when we get what we have been praying for but we have to acknowledge that God may have answered our prayers but by saying not right now or maybe even no.  I know that no one likes to hear the word no, but I am so VERY thankful that God did not give me everything that I thought I wanted through my lifetime.  How many of us can remember praying for things only to realize many years down the road if we had been given that one thing we wanted and thought was the best thing for us that we would have missed out on such a great blessing from God.  God knows what we need when we need it and we need to make sure that we are in God's will.  I know I am guilty of praying for something and then I think that God is not working fast enough for me so I take it upon myself to "help" God.  God only needs our help when we are following His will not our own will.  We live in such a rich country and how often do we stop and thank God for what he has done for us?  No, so often we sit around and complain because we don't have this or we have to do this.  How many times are our things controlling us?
